The taco: the cod is blackened and served with mango salsa and chipotle aioli on top of a flour tortilla.

The fish: Petrole Sole from Caito Fisheries or Princess Seafood, both of which are local in Noyo Harbor, depending on availability
The taco: Fish Taco Zarandeado. We rub fish with a special marinade of dry chiles with herbs and spices then grilled on very hot flat top grill, served on double corn tortillas and garnished with red and green cabbage slaw, drizzled with Cilantro Crema and topped with pickled red onions.
